Around 2 billion humans on earth eat insects on a regular bases. In the West insects are becoming a new and hip business model to be sold as a source of protein to people that can afford expensive "superfood". We have tested a sustainable, local and seasonal source of insect food.

Every spring the bee keepers remove lots of male larvae from the bee hive in order to get rid of Varroa mites and protect the remaining bees. Instead of letting those larvae end up in the trash it is possible to transform them into culinary treasures.
